It probably isn&#8217;t the most fat free meal but it is really good.  If you don&#8217;t like Duck don&#8217;t despair the stuffing recipe is amazing all by itself!  Enjoy&#8230;<\/font><\/p>\n<ul>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  6 duck breasts filleted<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1 cup water<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1\/4 cup butter<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1 cup apple juice<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1\/8 tsp cinnamon<\/font><\/li>\n<\/ul>\n<p><font color=\"#000000\" face=\"Arial\" size=\"3\">Place duck breast in skillet.  Add water and butter.  Cover and simmer 20 minutes until tender.<\/font><\/p>\n<p><font color=\"#000000\" face=\"Arial\" size=\"3\">Remove lid and continue cooking until water evaporates.<br \/>\nAdd apple juice and cinnamon.  Simmer an additional 15 minutes.<\/font><\/p>\n<p><font color=\"#000000\" face=\"Arial\" size=\"3\">Remove duck and set aside while preparing dressing.<\/font><\/p>\n<p><font color=\"#000000\" face=\"Arial\" size=\"3\">Thicken apple juice with cornstarch and set aside to serve over dressing.<\/font><\/td>\n<\/tr>\n<\/table>\n<p><!-- End Text Block -->  <strong><font color=\"#000000\" face=\"arial\" size=\"4\"><u>APPLE DRESSING<\/u><\/font><\/strong><\/p>\n<ul>\n<li><!-- End Text Block --> <font color=\"#000000\" face=\"Arial\" size=\"3\"> 1 box Jiffy corn bread mix<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  2 cups apples, peeled and chopped<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1\/2 cup onion, chopped<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1\/2 cup celery, chopped<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1\/2 tsp poultry seasoning<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1 egg<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1\/4 cup butter<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1 (10 3\/4 oz)cream of chicken soup<\/font><\/li>\n<li><font color=\"#000000\" face=\"Arial\" size=\"3\">  1 cup milk<\/font><\/li>\n<\/ul>\n<p><font color=\"#000000\" face=\"Arial\" size=\"3\">Bake cornbread as directed on package.  Set aside.<\/font><\/p>\n<p><font color=\"#000000\" face=\"Arial\" size=\"3\">In a saucepan, in a small amount of water, cook apples, onion and celery till tender. Drain.<\/font><\/p>\n<p><font color=\"#000000\" face=\"Arial\" size=\"3\">In a large bowl, mix together the cooked apples, poultry seasoning, egg, butter, soup, milk and the cooked cornbread.<\/font><\/p>\n<p><font color=\"#000000\" face=\"Arial\" size=\"3\">Place half of the dressing in a small casserole dish. Add duck breasts. Cover them with remaining dressing.
