{"id":741,"date":"2007-12-22T02:24:31","date_gmt":"2007-12-22T02:24:31","guid":{"rendered":"http:\/\/karatetraining.org\/weblog\/?p=741"},"modified":"2023-04-11T15:19:19","modified_gmt":"2023-04-11T19:19:19","slug":"coconut-balls-with-chocolate-drizzle","status":"publish","type":"post","link":"https:\/\/karatetraining.org\/weblog\/coconut-balls-with-chocolate-drizzle\/","title":{"rendered":"Coconut Balls with Chocolate Drizzle"},"content":{"rendered":"<p>Another Holiday classic!<\/p>\n<p>These take a little bit of work but are more then worth it!\u00a0 And don&#8217;t forget that Coconut is highly nutritious and rich in fiber, vitamins, and minerals.\u00a0 Classified as a &#8220;functional food&#8221; you can read more about <a href=\"http:\/\/www.coconutresearchcenter.org\/\" target=\"_blank\" rel=\"noopener\">it&#8217;s health benefits here<\/a>.\u00a0 But in this case please remember, it&#8217;s still a cookie!<\/p>\n<p>1\/3 cup butter, softened<img decoding=\"async\" src=\"https:\/\/karatetraining.org\/weblog\/wp-content\/uploads\/2007\/12\/coconut-cookies.jpg\" alt=\"coconut-cookies.jpg\" align=\"right\" \/><br \/>\n1 package (3oz) cream cheese softened<br \/>\n3\/4 cup sugar<br \/>\n1 egg yolk<br \/>\n2 teaspoons orange juice<br \/>\n1 teaspoon almond extract<br \/>\n1 1\/4 cups flour<br \/>\n2 teaspoons baking powder<br \/>\n1\/4 teaspoon salt (I use less)<br \/>\n3 3\/4 cups sweetened coconut flakes (leave 3\/4 cups aside for later)<\/p>\n<p>Beat butter, cream cheese and sugar in bowl until blended.  Add egg yolk, orange juice and almond extract.  Stir together flour, baking powder and salt and gradually add to butter mixture, beating until blended.  Stir in 3 cups coconut.  Cover refrigerate 1 hour.<\/p>\n<p>Heat oven to 350.  Shape dough into 1 inch balls, then roll the balls in remaining 3\/4 cup coconut.  Place on ungreased cookie sheet.<\/p>\n<p>Bake 10-12 minutes (check after 10).  Cool for about a minute or so before taking them off the cookie sheet or they&#8217;ll fall apart.<\/p>\n<p>Once done take some melting chocolate and drizzle on top.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Another Holiday classic!
